From the SNES games on, SaGa is all about nonlinearity and sidequests. But I haven't played any of those except the Game Boy games, so I can't recommend any of the ones with all the sidequests and such!

But I haven't played any of those except the Game Boy games Those are the ones that were titled Final Fantasy Legend (II/III) in the west originally, right? I have fond memories of playing those, even though II was a pain in the ass to get through as a child.
Only other game in the series I tried was Romancing SaGa III, and the translation patch I tried wasn't very good. Series always looked interesting, maybe someday...

The first Romancing SaGa only just got an English translation a few months ago. And yeah, the only complete English translation for 3 is not great from what I hear. There are none completed for 2. Aeon Genesis has had a page for 2 on the site for years but progress has never gone past 5%. He posted an update on it last year so at least he's done some work on it recently. (Poor Slime Morimori . . . )

Now go back and play Morrowind for an Elder Scrolls with actually good story! And better magic spells! Physical combat is kinda poor though.

Mandatory SkyUIAn overhaul of the entire UI system to be much more PC friendly and simpler to navigate. Also enables the use of a customization menu for many mods, so if you prefer the original UI, there's a SkyUI-Away mod to revert the UI, but keep the functionality for customization menus. Skyrim Script Extender (SKSE)A mod utility that enables more things to be done. Required to use a lot of mods. If you aren't using any that require it, it doesn't do anything, but with how common it is, it's best to grab it regardless. Unofficial Skyrim Legendary Edition Patch (USLEEP)An unofficial bugfix patch for the Legendary Edition. Every mod assumes you have it, and it does a lot of good work alone. If you don't have all the DLC, then you can grab the final versions of the Unofficial Skyrim Patches for the base game and ones you do have. LOOTNot a mod, but a utility program for fixing mod order, which can affect how mods overwrite each other. Very simple to use, just install, run, and sort. For this number of mods, you probably won't have any issues with how it sorts them. Wrye BashAlso a utility program, this lets multiple mods change the loot tables in your game (otherwise, only the most recent change takes effect). A bit more complicated to run, but still very simple, with plenty of easy tutorials to find - look for "How to make a Bashed Patch". Once done, that bashed patch will go at the very end of your load order. *If you aren't using the mods in the last section here, or any others that add new items, you probably won't need this.
General Improvements Skyrim UnboundRemoves the introduction sequence of the game and gives you a pretty wide range of where and how you want to start. It does automatically complete the first few quests in the main questline, though, effectively removing them from the game and allowing you to start or ignore the main quest as you see fit. DisparityIntroduces significant racial and gender variance to character creation with regards to HP, stamina, carry weight, movement speed, and others (all can be toggled off individually if you don't want it to change that). It also lets you customize starting skills via a starting skill point distribution, rather than having them entirely dependent on race. Better Dialogue ControlsGreatly improves your ability to actually click on the response you want. Run For Your LivesGeneral citizens stop trying to fight dragons and retreat inside, letting the guards (and you) do it. Prevents massive death of NPCs that can provide quests and services whenever dragons attack a city. When Vampires AttackSame as above, except for vampire attacks in the Dawnguard DLC. AutoSave ManagerI highly recommend you not use Skyrim's quicksave feature. There's issues with it overwriting itself that contribute to corrupting save files. I don't know if it also extends to autosaves, but I've switched entirely to this. The only downside is that your save count number will go through the roof, since every save is technically a "manual" save, but that's a pretty minor issue. Weapons and Armor Fixes RemadeFixes a bunch of dumb stuff Bethesda did. Clothing and Clutter FixesSame idea, same author, different category. Brawl Bugs PatchFixes the poorly coded brawling mechanic in the game.
Graphical Improvements Since I'm running an old PC, I can't speak to actual texture mods (though there is a free High-Res DLC available - make sure to get the Unofficial Patch for it if you grab it). Most of these involve general improvements to areas or people, rather than actual details. I also didn't find people horrifying to look at (half because of my low settings, half because I don't actually want a world full of beautiful people), so I don't have any character overhauls (with one exception). Immersive HUDI don't like HUDs in muh RPGs. Expanded Towns and CitiesVastly improves all of Skyrim's towns and settlements, aside from the five major cities. Some of these places can barely be called towns without this mod. JK's SkyrimThere are two versions of this mod: one that overhauls every town and city, and one that just overhauls the major cities, to be used in tandem with ETaC. Personally, I use the latter, but you're more than welcome to try this one in full, too. I definitely appreciate the changes it made to cities, which I had previously found very disappointing. Climates of TamrielGreatly improves weather and sky appearances. Can also adjust the lighting at night and in dungeons to make them darker and more menacing, if you like. RS Children(insert obligatory HJ joke here) Makes kids not be potatoes and also actually look different from each other. And yes, it's completely SFW, [radio edit] off everyone. Pure WatersThere's several water mods, this is just the one I use. I don't remember why I picked it - it might have been the most compatible with my (extensive) modlist, or it might have been performance, or it might actually have looked the best to me, I don't remember. Feel free to check out some other popular ones. A Quality World MapMakes the map not terrible by improving detail and removing the obnoxious cloud cover. Also adds the roads so the map is actually useful. EzE's Colored Map MarkersBecause [radio edit] is it obnoxious to look at a cluster of them otherwise. Enhanced Light and FXImproves a lot of Skyrim's awkward lighting and generally makes light come from actual sources, instead of nowhere. Also fixes some issues with shadow striping. There's a couple other lighting mods that are well-received, but I chose this one for compatibility and performance. Again, feel free to look and choose a different one. Tropical Skyrim OverhaulIf you ever get bored. *This actually isn't compatible with several mods here and was included largely as a joke. It also makes nights incredibly dark for some reason. It's hilariously fun in the daytime, though. Also, unless you're using the program Mod Organizer, uninstalling this will be annoying.
Quests/Areas Interesting NPCsAdds a shitton of new NPCs to the game, all voice acted extremely well (I can rarely tell when they're from this mod by voice alone), and with many who bring new quests to the game. Note: I haven't actually played the content from the following yet, but they're pretty widely recommended, and several add about as much content (or more) as the official DLCs. Helgen RebornLong questline to restore Helgen to a functioning city. FalskaarBrand new huge area. WyrmstoothAnother brand new huge area. Blackthorn - A Buildable Town in the RiftLiterally that. Effectively a great money sink later in the game when there's nothing to spend all that gold on. Legacy of the DragonbornThe only one I don't actually have in my game, but I've been hearing great things about it pretty consistently. And I know you said you weren't necessarily looking for new items, but I'm going to throw these in because I think they add a lot of excellent variety to Skyrim, which otherwise can have a very standard and boring progression.
Adding Extras Immersive WeaponsA combination of several quality weapon mods, introducing a lot of new kinds of weapons. Immersive ArmorsSame as above, but for armor. Apocalypse - Magic of SkyrimThere's several good magic mods out there, but I think this is probably the best single one I've found. Adds a lot of variety to magic, instead of just "shoot this as a single bolt or as a continuous stream at varying levels of power". Spells will have situational uses, cater to playstyle preferences, and overall move away from the linear progression of magic in base Skyrim. You didn't mention it, so I didn't pull from this pool, but there are also a number of mods I have focused on improving combat, the perk system, and the crafting system if you have an interest in those. As well, if you're interested in finding new mods on your own, a fantastic page is Skyrim GEMS, which has a bunch of (generally) quality mods separated by section for ease of targeted browsing. Or you can ask, and I can drop some recommendations.

ew I don't even mean Fireballs and other damaging magic though. The Alteration school of magic used to have a bunch more cool spell types, like Levitation, Jump (get a strong enough spell of this and you could literally jump from one end of the island to the other), Water Walking, Locking and Unlocking, elemental shields. Then there was an entire other school of magic called Mysticism, some of its effects (like creature detection) were moved to other schools but it had things like Spell absorption/reflection, stat absorption, and Mark (mark the point you're standing on) and Recall (teleport to the point you previously Marked). I guess Mark and Recall don't matter much when you can fast travel wherever you want with no effort needed. It's not like I wanted to actually play the game or anything, it can just automatically do everything for me.

Fast Travel is now the first thing I eliminate in an ES game.
But yeah if you haven't enjoyed the vanilla magic system, Adna, I totally get that, because not only is it kind of boring, it's also useless in comparison to the broken crafting system. It's one of the reasons why I recommend Apocalypse, because the spells it adds actually make other schools useful and interesting to use.
I'm actually playing an Alteration/Illusion character right now, it's been pretty interesting. A really fun augment to general thief skills so far, because the last sneaky character I played back in Oblivion, I set the restriction of no magic at all for.
