This is not at all why the proportions are more realistic. Anime art hasn't evolved at all stylistically between the mid-2000's and today.

If I was going to introduce someone to anime, I'd have them watch Cowboy Bebop.

The story is easily accessible to a western audience, it lacks most of the typical anime tropes, and has great music.

I, or someone else, probably has (although 'recently' is up for debate). I have a friend who hates anime, just like Adna, and he was the one who introduced me to Bebop.

He's also a huge Firefly fan. IMO, it's pretty much impossible to like one series and dislike the other.

It's also relatively sub-par so they won't be disappointed when they go to check out some of the other anime that's out there.

This seems to be a common trend for Bebop. I know of at least two other reasonably well-known internet personalities who aren't anime fans but like it anyway.
