Just like "omg we can't bend metal". They didn't bend metal, because they were peasants and weren't smart enough to realize metal is earth. In a similar note, nobody realized bloodbending was capable at all, and then afterwards nobody learned anything about it because it was so "evil". I bet Katara can bloodbend any time too, she's strong enough. She just doesn't, because she has solid morals.
