Well I don't know what anime you've already seen or not but I suppose I could give a few recommendations like ~~watch Code Geass again~~ Serial Experiments Lain, Kara no Kyoukai and Ghost in the Shell: SAC (this show is episodic but good at it, much like Bebop).

The anime abruptly ends halfway through the story and isn't as good. Also, I'm sure anyone who's read the VN will disagree with me but Higurashi is good as well, although the first season has kinda weird pacing.

Yeah, it was one of my earlier ones as well and I have to say the anime has some derp moments, although so does the manga, it just has considerably less derp moments and actually has an ending. Ironically enough, the piece that Elfen Lied was named after didn't even make it into the anime, although I think Lilium makes up for that as it's a great song. There's one example that stands out quite a bit regarding the anime vs the manga. Spoilers for Elfen Lied When Kouta finds out that Kaede killed his father and sister(surprise!), he's barely phased by it in the anime whereas in the manga this is handled quite differently to say the least.

Also, if you don't mind a HUGE cliffhanger ending then densetsu no yuusha no densetsu is a pretty good medieval fantasy series, it can be rather funny at times but it does have a more serious side to it(particularly later on). It's a shame it isn't getting another season as far as I know.

If you're interested in dark fantasy stuff you can look at Attack on Titan or Claymore. I really don't watch a lot of fantasy anime in general, so.
